How do people do this? I know you can rename things, do you have to be immortal to not be limited by 16 characters?

those types of things do typically require higher ranks to be not limited by the 16 character limit, and yes i do believe that it requires the highest rank purchasable on any given server (bar the plus rank) in your case being Immortal rank.
